As I was learning, I would crank it down to the lowest setting, to give me a bit more time to rotate the pie, and lessen the risk of over cooking the crust. Two long handled pizza peels are included: the flat metal object to slide under the pizza to place in the oven and retrieve once cooked. The smaller peel is best used for rotating the pie while cooking, to even the cookie to the entire circumference evenly. You can ferment for only a few hours if you wish, but the word in the pizza circles is a slow ferment maximizes the ability to develop a fully flavored pizza crust.
