Description: Large Diameter Curved Casings. Not Edible. Traditionally used to make Liver Sausage, Ring Bologna, and Braunshweiger type sausage recipes. Also used for the production of Chitterlings. By its very nature they have a strong odor and should be rinsed well before using. When refrigerated, packed liberally in purified salt, they have an indefinite shelf life. Un-refrigerated, these salted casings quickly begin to give off a strong odor even though they are not spoiled. Put them back under refrigeration and this odor for the most part subsides. Packed 5 pieces (7 feet each) per pack. Hog Middles are not completely de-fatted, it is normal for them to contain fat along the interior lining.
