With an HRC rating that is neither too high nor too low, this stainless steel knife can be easily sharpened not only with a whetstone but also with a simple sharpener or honing rod. As this knife has a single-layer blade, those familiar with using whetstones can easily customize the edge, such as converting it from double-beveled to single-beveled. Five characters are written on the right side of the blade. The first two characters mean 'Noshu,' which is the old name of Gifu Prefecture, where Seki City, where this knife was manufactured, is located. The next two characters mean 'Magoroku,' the name of a swordsmith who used to live in Seki City in the past. The last character means 'work.' The sticker on the ferrule means 'Nakiri.
