This exterior of this oven is constructed of heavy duty stainless steel, while the interior is constructed of aluminized steel. The oven chamber features a cordierite deck, with top and bottom dampers providing even heat. The micro-slides and dampers are adjustable, so the crusts and toppings are cooked as needed. The doors are spring-balanced.The throttling thermostat, with its range of 300°F to 650°F, is easy to operate and set for the temp you need. Gas controls include valve, regulator, and pilot safety. The ceramic hearth decks provide a nice way to crisp up dough while not allowing it to stick and become difficult to shuffle around the oven.
