The large, green leaves have red / purple tips in spring that persist until early summer. The summer color is solid green before changing to mostly crimsons and reds in the fall . Height : 8 ft. US hardy Zone : 5a to 9a Medicinal use : None known Edible parts of Japanese Maple: The sap contains a certain amount of sugar and can either be used as a drink, or can be concentrated into a syrup by boiling off the water. The syrup is used as a sweetener on many foods. Other uses of Japanese Maple: The leaves are packed around apples, rootcrops etc to help preserve them.
